My favorite way to preserve Eggplant! Packed with tangy olives and oven-roasted eggplant, this Caponata Sauce delivers bold Mediterranean flavors in every spoonful. This sweet and tart Sicilian relish can serve double duty as either a tangy topping for Bruschetta on a crusty bread or tossed with hot, cooked pasta and shaved Parmesan.

Tip: Drizzle some extra virgin olive oil just before serving!
