Stuffed Peppers (Vegitarian)

A vegetarian take on a classic stuffed pepper making it both a light and hearty meal. By removing the meat means more room in there for garden fresh veggies. I make these at least twice a month during the summer growing season. This is also a great meal to turn Vegan by simply using plant based cheese.

Tips:

-Although any Bell Pepper will do, choosing to grow and harvest thick walled, 4 lobe varieties are the best. These varieties include; “King Arthur”, “Red Knight” and “California Wonder".

-This is the perfect recipe to use homemade Jalapeño Salt in place of regular salt!
