Cinamon Watermelon Rind Pickles (Water bath canning)

Make the most of your Melons! After I eat the juicy red watermelon pulp, I use the peeled rind to make this sweet, cinnamon flavored pickle. They are perfect for summertime picnics and barbecues or to perk up cold-weather meals.

Tip: To prepare watermelon rind, remove dark green peel from watermelon and discard. Cut rind into 2- by 1- inch slices,
